The festive season is here and we all love to indulge in some sweet treats. But what if we told you that you can enjoy some delicious desserts without compromising on your health? Sounds too good to be true, right? Well, not anymore!
Festivals are a time to celebrate, enjoy, and indulge in delicious food. But sometimes, we end up eating too much sugar, fat, and calories that can affect our health and well-being. That’s why ellementry, your one-stop destination for all things beautiful and functional, has come up with some amazing recipes for healthy no-bake desserts that you can easily make at home with our kitchenware. These desserts are not only tasty but also nutritious, gluten-free, vegan, and refined sugar-free. They are perfect for satisfying your sweet tooth without feeling guilty.
We recently organised a dessert workshop at ellementry Nagpur store where Chef Parth Bajaj was the host. To make these desserts even more special, we used some beautiful kitchenware from ellementry that added elegance and charm to the presentation. He demonstrated three healthy no-bake desserts using ellementry products which were amazingly simple and delicious. Quench your sweet-tooth cravings with these splendid recipes.
Panna Cotta (Vegan)
Panna cotta is a classic Italian dessert that is usually made with cream, sugar, and gelatin. But this version is vegan, dairy-free, and uses agar agar as a natural thickener. It is creamy, smooth, and light, and can be flavoured with any extract or fruit you like. The panna cotta was nicely set on Butter up Ramekin in individual portions and a lovely yellow ceramic color contrasted with the white panna cotta. To serve, the panna cotta was demoulded onto the Upper crust ceramic cake stand and garnished it with some jam and fresh fruits for a pop of color and flavor.
Ingredients you’ll need:
- 100 g plant based milk of choice (or regular milk)
- 200 g vegan cream or regular cream (you can use any variety , for example
- coconut cream)
- 2 tbsp coconut sugar
- 1 tsp agar agar powder
- Few drops of vanilla extract
Steps:
- Combine all the ingredients in the Aara tea pan.
- Heat until it comes to a boil
- Boil the mixture 4 times in total, and then pour into greased Butter up ramekins.
- Let it set in the fridge for at least 1 hour or more if required.
- Demould, and garnish with any toppings you like (like some jam, compote, crushed nuts, etc).
Modaks (gluten-free, refined sugar-free)
Modaks, the sweet dumplings that are popular during Ganesh Chaturthi that are usually made with rice flour and jaggery, and stuffed with coconut and nuts, were perceived in a healthier version by using oats, nuts, dates, rose petals, and cinnamon. We made a healthier version by using oats, nuts, dates, rose petals, and cinnamon. Roasting the oats and nuts in the Aara tea pan is an experience in itself as the essence of copper and heat disstribution makes it flawless. The placement of modaks on the Sous chef platter was a tempting presentation.
Ingredients you’ll need:
- 1/2 cup nuts of choice (maybe a combination of 2)
- 1/2 cup oats
- 2 Tbsp rose petals
- Pinch of cinnamon
- 3/4 cup dates (pitted)
Steps:
- Roast the nuts and oats in a pan, until they have some colour and they become fragrant.
- Add in the rose petals and pinch of cinnamon, cook for 30 seconds or so.
- Transfer the mixture to a mixer grinder or food processor. Grind it till a coarse powder is formed (the consistency will be kind of like sand).
- Add in your pitted dates and blend until a dough is formed (the consistency now will be similar to wet sand).
- Use your hands or a modak mould to shape the dough into modaks.
- Garnish and enjoy this guilt free dessert.
Customisable Cottage Cheese Cheesecake Ice-Cream (no cream, no refined sugar)
A decadent dessert that tastes like cheesecake but is actually ice-cream and easily made with paneer, honey, vanilla, and fruits of your choice. Paneer is a type of cottage cheese that is high in protein and calcium. It also gives a creamy texture to the ice-cream without adding any cream. Butter up ceramic mixing bowl was a perfect choice to make a consistent mixture and easy pouring through the spout. Scooping the ice cream into the floral wisteria platter was blissful as it elevates the dessert and makes it look more appealing.
Ingredients you’ll need:
- 300 g paneer
- 1/2 cup honey
- 100-150 grams fruit of choice (anything like mangoes, grapes, strawberries, blueberries, kiwi)
- 4-5 biscuits (optional)
- Dash of vanilla extract (optional)
Steps:
- Blend the paneer in a food processor or a mixer grinder until smooth.
- Add in the honey, dash of vanilla and choice of fruit.
- Blend again until completely smooth.
- Transfer to your choice of container and top with some more fruit and crushed biscuits.
- Freeze overnight and your healthy ice-cream is ready!
