Procedure 

In a cooking pan, spray olive oil and cook the stem of the mushroom with onion. After that sauté for 5 mins and add garlic and cook until you get an aromatic fragrance. After that wash and strain your spinach in a bowl, before cutting it up finely. Then add lemon, cheese and salt and ricotta and let it season for a minute or two.

  • Bacon and Cheese Croquettes

  • 2 green onions, one egg and egg yolk

  • 3/4 cup of plain flour 
  • vintage cheddar cheese, 80 grams

Procedure

Next, heat a pan with medium heat, and then add the beacons. Cook the beacon for a while until tender and remove it carefully. After that, Place egg yolk, mashed potato, bacon, onion and 1/4 cup flour in a bowl and mix it. Following that, make 20 balls out of the mixture and place a cube of cheese inside each ball before enclosing it. 

Now, place flour on a large plate and breadcrumbs on another. Then mix milk and eggs and keep these in a shallow bowl. Coat the balls in all the mixture and fry over a pan. Once done, you will have a scrumptious golden-brown croquette. Now, place these artfully and strategically on your platter to serve to guests. 

 

  • Floral Onions  

 

If you do not want to go for basic onion rings, these floral onions are ideal for some crunchy fried platters. To make this dish, you will need: 

  • cayenne pepper ¼ tsp 
  • 1/2 cup milk 
  • Paprika ½ tsp 
  • 1 cup plain flour 
  • 2 eggs 
  • 1 l vegetable oil 
  • 1/2 cup mayonnaise 
  • 1/2 tsp horseradish cream 
  • 1 tbs tomato sauce 

Procedure 

Start with combining tomato sauce, mayonnaise, paprika, cayenne pepper and horseradish cream in a bowl and set it aside. Next, for seasoning, combine 1/2 tsp paprika, 1 cup plain flour, and 1/4 tsp cayenne pepper in a mixing bowl. keep this aside and in another bowl whisk milk and beat two eggs.  

Now for the onions, peel 2 brown onions and keep them base side down, on aboard. Then carefully make 16 cuts in each onion to make petals, with intact. Next, place the onions carefully over the flour and coating petals and dip these inside them. Shake the excess flour out and dip in egg and flour mixture once coated. 

Next, in a pan heat 1 L of vegetable oil to 175C. after that, dip onions, cut side down in the oil for 2-3 minutes and cook for 1-2 minutes or until golden. Once done, take these out, drain the excess oil and place them in your platter for garnishing. You can use herbs, place the onions vertically to create a floral look.

Next, in a large frying pan, heat oil over medium-high heat. Place the meatballs and cook these for, 5 to 7 minutes, or until tender. Once done, serve these artfully in your gorgeous platter
